This recipe requires minimum 24 hours to prepare. It is ridiculously amazing. I can’t stop eating it!

Ingredients

2 Cups Cashews, Soaked

¼ Cup Pine Nuts

1 teaspoon Salt

2 Tablespoons Lemon Juice

1 Cup Water

5 Capsules Probiotic (or equaling 200 billion organisms)

Favorite Dried Herbs For Rolling

Procedures

Blend in high speed blender until creamy

Stir in probiotics by hand.

Pace in mason jar and rubber and cheesecloth over the top. Put in warm dark place for 10-24 hours, depending on how you like the taste. Placing it in the dehydrator At 90º will speed along the process.

Form into wheel and Place mixture in cheesecloth or nut milk bag and place in colander. Place a weighted plate on the top and let sit in the sink or on plate for 3-7 hours depending on how firm you wan the cheese.

Take out of cheesecloth and form a better wheel with hands. Cover with favorite herbs. I used Sage, Rosemary, Peppercorn, and Thyme.

Place in dehydrator to make more firm if desired. Making a bigger wheel will allow the outside to get firm but keeps the inside soft.

Mashed “Potatoes” and Gravy!!

These taste very close to the real thing… only better because there is no starch!!!
Ingredients

  • 1 Head cauliflower
  • 3 tablespoon Lemon Juice
  • 1 Tablespoon Olive Oil
  • ⅔ Cup Soaked Cashews
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Miso Paste
  • ½ Tablespoon Psyllium Husk Powder
  • 2 Tablespoons Freshly Chopped Parsley
  • Salt

Procedures

  • Blend in food processor with ¼ cup water. Strain in nut mylk bag. This will get rid of cauliflower taste.
  • Blend in food processor until desired consistency is reached. Add salt to taste.
  • Hand mix in chopped parsley.

 

 

 

For Gravy:

 

Ingredients

  • 1 Teaspoon Miso
  • ¼ Avocado
  • 2 Teaspoons Tamari
  • 1 Teaspoon Garlic Powder
  • 10 shiitake Mushrooms
  • ¼ Teaspoon Thyme
  • ¼ Teaspoon Sage
  • 1 Cup Water

Procedures

Blend all in blender except for 4 mushrooms.

Chop remainder mushrooms and stir in.

Using hot water will make the gravy warm!

Put on top of Mashed “Potatoes” or any other dish calling for gravy!

 

Garden Fresh Crackers November 21, 2012

These are super savory and fresh tasting!

 

Ingredients
2 cups Ground Flax
1 medium Zuchini
1 cup Chopped Carrots
1 heaping teaspoon Whole Rosemary
6 whole Fresh Parsley Leafs
7 Soaked Sundried Tomatoes
1 teaspoon Olive Oil
1 Teaspoon Garlic Powder
1 Teaspoon Thyme
1 Pinch Ground Sage
¼ teaspoon Ground Oregano
Salt to Taste
2 cups Water
½ juice Lemon
***Instead of using the listed vegetables, try using some veggie pulp from your favorite juice!***
Procedures

Blend all ingredients in food processor

Slowly add in water until well blended. Once all water is poured in, let blend for at least 2 minutes.

Spread on teflex sheets (you will need 2) and put in dehydrator at 104 degrees. Flip half way through drying process.

Cut into squares once crackers are formed. You can then place them back into the dehydrator until desired firmness is reached.

Thanksgiving.. The Best Time To Be Raw!

Holidays… Especially those revolved around food are my absolute favorite time of year! This is when I get to show off to all the SAD eaters how awesome it is to be raw and how pretty and appetizing raw dishes look! I know it is not that hard to make a dish look prettier than a dead carcass, but the level of amazing raw veggies can look on a plate is truly mind blowing. Everything is so bright and lively looking! And the best part is you are bright and lively looking when you are done eating instead of dead on the couch like a sack of potatoes! We don’t need to feel like crap or worry about the holidays! It’s a joyous time!!

This thanksgiving I am making the following:

-Italian style Bree with garden flax crackers
-stuffing
-mashed potatoes
-cranberry sauce
-chick-un Parm
-pumpkin spice roll

I went shopping today for all the ingredients and I will post up every recipe! All of these items I am making is enough to serve 5 or 6 and it cost me under 100$. I don’t want to hear ever that its too expensive to eat healthy! Everything was also purchased organic and local when possible!

Here is a recipe for super easy 3 minute cranberry sauce:

8 oz Raw Cranberries
15-20 softened Diglet Dates
Juice from half a lemon
1/2 tangerine
Pinch cinnamon
Pinch sea salt
Optional- diced jalapeño

Blend all ingredients except tangerine and jalapeño in food processor until desired consistency is reached. Add in diced tangerine and jalapeño and mix by hand. Let sit in refrigerator over night to let the tastes blend together. Done!

Here is a great butter alternative that i whipped up this morning to go with my bread i made! Its creamy and salty and did the trick! It is high in really good fats too so it is great to have in the morning to get that brain pumping and ready for the day!

Ingredients

-3 tbs coconut oil

-1 tsp real sea salt

-1 tbs hemp seeds

Put all ingredients in a mortar and pestle and grind down the seeds and mix well. Put in refrigerator until hard, or if its cool in your home leave on the counter for a more creamy texture!

 

Gourds and Bombillas April 23, 2012

Many of you have probably seen these at some point, whether it be in a health store or someone drinking out of one. Usually these gourds are filled with yerba mate tea leaves, and one can simply stick the bombilla (straw made from bamboo or stainless steel) and drink. Mate is a great coffee alternative, as the stimulation does not affect the nervous system. You will get a mineral filled energy “buzz” but will not have a crash or a gittery feeling. Drinking from the bombilla directly allows for ultimate mineral absorption.

imageI do not just limit my gourd use to mate. Since I am very strong on herbal medicine, I will fill my gourd with many different herbal formulations and drink it in the same manor. It is a great way to drink your herbs and get everything they have to offer!!

It is a rather inexpensive way to drink your teas and get the full benefits!

Here are some links where I buy mine. I prefer the stainless steel straws over the bamboo, as they last much longer and tend to not get clogged.

Here is a tasty high energy tea that you can try for yourself!

-4 tablespoons unsmoked mate

-1 tablespoon crushed cacao nibs

-1 tablespoon goji berries

-Optional: Pinch of fresh vanilla powder

I guarantee you will love drinking from a gourd!

 

Raw Almond Butter March 20, 2012

Almond butter is incredibly easy to make and tastes way better than store bought! I use my vitamix to make it, but you can also use a food processor!

What you will need:
-at least 3 cups of raw almonds (sprouted and dehydrated)
-cinnamon to taste
-salt to taste (if you sprout in sea salt water like me you will need less)

Put the dry almonds in the vitamix or food processor on highest setting. It is important when using the vitamix that you do not let the blade free spin so be sure to use the jabber to push down the almonds as they grind. The almonds will start to heat in both machines from friction so be sure to give frequent breaks for cooling. When almonds begin to get pastey add in cinnamon and salt. Continue to grind until butter is formed. It will take up to a total of 15 minutes of blend time before butter is formed. Store in a glass jar in the refrigerator. You will never buy another jar at the store again!
