Mashed “Potatoes” and Gravy!! November 22, 2012

These taste very close to the real thing… only better because there is no starch!!!

  • 1 Head cauliflower
  • 3 tablespoon Lemon Juice
  • 1 Tablespoon Olive Oil
  • ⅔ Cup Soaked Cashews
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Miso Paste
  • ½ Tablespoon Psyllium Husk Powder
  • 2 Tablespoons Freshly Chopped Parsley
  • Salt


  • Blend in food processor with ¼ cup water. Strain in nut mylk bag. This will get rid of cauliflower taste.
  • Blend in food processor until desired consistency is reached. Add salt to taste.
  • Hand mix in chopped parsley.




For Gravy:



  • 1 Teaspoon Miso
  • ¼ Avocado
  • 2 Teaspoons Tamari
  • 1 Teaspoon Garlic Powder
  • 10 shiitake Mushrooms
  • ¼ Teaspoon Thyme
  • ¼ Teaspoon Sage
  • 1 Cup Water


Blend all in blender except for 4 mushrooms.

Chop remainder mushrooms and stir in.

Using hot water will make the gravy warm!

Put on top of Mashed “Potatoes” or any other dish calling for gravy!

These are super easy, super fun, and super yummy!



  • 2 large collard leaves

Nut Meat:

  • 4 cups walnuts, soaked and sprouted 
  • 1 packet taco seasoning, or
  • chili powder, cumin, coriander and cayenne to desired taste. I use roughly a teaspoon of each, except 1/2 teaspoon of coriander.
Combine all ingredients in food processor and mix until chunky, but blended consistency is formed.
Sour Cream:
  • 2 cups cashews, soaked and sprouted
  • 1 fresh squeezed lemon
  • 1 tsp coconut aminos (can use soy sauce in replace of)
  • sea salt to taste
  • 2 cups water
Add all ingredients except water in high powered blender. Slowly add water until thick but creamy consistency is formed.
Creamy Avocado Sauce:
  • 1 Florida Avocado
  • 2 tablespoon chipotle seasoning
  • 1 teaspoon cacao powder
  • Fresh lime juice from half of a lime
  • salt to taste

Combine all ingredients in high power blender until creamy.


  • 1 red bell pepper
  • 1 large tomato
  • 1/2 onion
  • cilantro
  • wilted spinach (4 cups spinach, 3 tbs olive oil, 1 clove chopped garlic, 1/2 teaspoon sea salt. rub with hands or tongs until wilted)
  • romaine lettuce
  • favorite hot pepper

chop all ingredients and stuff inside collard leaf.

To properly fold collard:

cut out thick part of stem.

fill ingredients in the center of the leaf.

fold over right side, tucking the back, loose part of the leaf where the stem used to be.

Fold over the top of the leaf so the filling is now pocketed.

Rotate burrito to the right, and roll burrito over so it is assembled.

I get many emails and questions regarding fruit consumption and how much is ok, or if it is even ok at all. Here are my answers.

Is fruit too high in sugar?

Yes and No. Some fruits are hybrid fruits or are cloned, so they can not reproduce on their own. The seeds found in these fruits can not sprout and grow into new trees. Many fruits in the grocery store are like this, including kiwis, bananas, seedless grapes, seedless cucumbers, seedless watermelon, and any other seedless fruit thats out there. These fruits are high in sugar and low in minerals, so it is a strong impact on the body as the sugars are mostly what is recognized by the body.

Most of the fruit in the supermarket is picked unripe, are shipped from all over, and have very low nutritional value. Find local fruits that are in season and eat those. These fruits will have proper minerals and your body will not get a shock of sugar when you eat it. You also should not have fruit as your main type of calorie. I eat fruit in between meals as snacks, or for breakfast. This provides me with energy, and is also consumed on an empty stomach for proper digestion.

Is there a certain time i should be eating fruit?

Mornings are great! It will provide your body with many living enzymes to get your body movin’ and groovin’! Having a snack of fruit in between meals is also great because you will provide your body with a nutritious energy boost!

Why should fruit be consumed on an empty stomach?

Fruit takes only 20-30 minutes to digest. If fruit is consumed with something that takes longer, such as a fat, it will digest first and sit in the stomach/small intestine until the rest is able to pass through. This will cause a fermentation in the digestive system. This will lead to gas, bloating, and an upset stomach. It will also create acidity, and we all know disease lingers in acid environments.

I have heard of the 3 day mono-diet fruit cleanse. Is it ok to eat that much fruit in 3 days?

I have done mono diets a few times, as they are a great way to empty the system out in a short period of time. They are completely safe to do, as long as you are not over eating fruit, or eating high sugar fruits. I usually choose apples because they are easy to take with me and eat, and they are high in fiber and pectin. It is important to remember that you cannot eat HUGE amounts of fruit all day long because you are hungry. It is important to drink plenty of water (i add lemon or trace minerals to help with cleansing) and eat a smaller amount of fruit. Listen to your body. You will know when to stop eating the fruit as you will be tired of it or it will begin to taste bad.

A great fast to try if you are having kidney issues is a watermelon fast. It is an extremely hydrating diet and will flush the kidneys out!
Is the 80/10/10 a safe diet?

In my personal opinion: No, especially not for long periods of time. Eating a diet that consists of 80% fruit that comes from the supermarket is unsafe due to the fact that it is mostly hybrid fruits and fruits high is sugar, under ripened and low in mineral content. Doing this diet for long periods of time will cause mineral depletion in the body and will cause insulin to constantly be on the rise. If you live in a place where you are able to eat  LARGE VARIETY of fruits that are grown LOCALLY, this may be ok if you are incorporating super food into your diet as well (like goji berries, noni berries, etc). Listen to your body. When your mood is unstable or you are not able to think clearly, something is wrong digestion wise.

Don’t be afraid of fruit, just eat the right kinds at the right time. Note that all fruit is not sweet! Tomatoes, cucumber, zucchini, okra, noni, goji, are all bitter fruits and great for the body. Fruit can be incredibly healing and have a lot to offer you. Try new fruits you have never had before! They all have a little something different from the other. ALWAYS listen to your body first. Remember, YOU are your own doctor!

This is a super fast and simple recipe and easy to take with you! Nori will bring you many minerals and has many health benefits… something a regular wrap does not have! Instead of using a flour wrap that has nothing to offer, use something that will actually add something positive to your well being!



– 1 Nori Sheet

– Tahini

– Bell Pepper (not green! these are unripe and very harsh!)

– Avocado

– Sprouts

– Watercress

– Cucumber

– Favorite green

– Hot pepper (optional)




Lay nori sheet so shiny side is face up. Spread a thin layer of tahini on the sheet , especially on the edge. This will be your glue! Towards the opposite edge  of the sheet lay your greens down, followed by slices of the vegetables. I usually lay down the avocado first and add the peppers and cucumber. Top with sprouts and watercress. Now to roll it up! Start by folding one end of the nori over the food in it.  Tightly begin to roll it up and seal with the tahini. Cut with a serrated knife and dip in your favorite sauce! These are incredibly filling due to the high vitamin and mineral content!


Portobello Sandwich February 10, 2012

This is a super simple recipe for a quick and easy sandwich! You are guaranteed to feel full and satisfied after!



  • 1 Portobello
  • 1 Favorite Pepper (i used jalapeno)
  • Sprouts
  • 1 Avocado
  • 1 Tomato
  • Spinach or other favorite green
  • Olive oil, Apple Cider Vinegar, or favorite dressing
  • Salt, and other spices you would like to add. (I used oregano and basil)


Lay the portobello on the counter and place hand on top. With a serrated knife, cut the portobello  across so that you get two circular pieces. Flip the bottom part half over so that the darker inner part of the mushroom is facing up. Spread the avocado on it. Add salt and spices. Now start piling on your favorites! I add jalapenos, spinach, tomato, and sprouts. Spritz with Olive Oil and Apple Cider Vinegar.  Cut in half and enjoy!! You wont be disappointed!



Quick Oat-free Oatmeal February 9, 2012

So i recently developed a sensitivity to oats so I need to lay off them for a while. I loved eating my superfood oatmeal every morning with goji, mulberries, goldenberries, and cacao nibs with sprouted oats, honey or maple syrup and cinnamon. Sounds great right? So this morning I came up with a new one that is oat free and thought i would share it with you!


-1 cup flax seed (ground or sprouted) or Chia seeds (i used half and half)

-1 apple diced

-2 tbs liquid coconut oil (i love coconut oil if you prefer 1 thats fine too)

-1 tbs almond butter

-Honey/Maple Syrup to taste/Agave


Place flax/chia, half of the apple, coconut oil, sweetener, and cinnamon in the food processor until mixed. Add in the rest of the apple so that it remains chunky through out. Add any superfoods you would like! The food processor is not necessary but mixes it really nice. This will keep you so full for a long time. Its a great way to start your day energized!

super soft, and has way more of the amount of daily fiber you need in one day! I think these are better than the real thing!


– 3 cups of flax meal (i kept 1/2 of a cup unground because i like the crunch of them. Also, using golden flax will give more of a “pancake” color)

– 2 tbspn coconut oil (liquid)

– 1/2 cup maple syrup (or you can use dates, 5 or 6)

– fruit to top them off!

Mix all ingredients in a bowl except the fruit. Form into balls and flatten into pancakes.

If using dates, mix all ingredients in FP.  Throw some chopped fruit right in if you’d like to make a fruit flavored pancake!!

These are incredibly filling and so tasty. I prefer these over the processed flower pancakes any day!

If you would like you can put them in the dehydrator for a bit to make them more forming and warm.

The Most Amazing Raw Vegan Brownies in The WORLD! March 31, 2010

seriously, i have never had something so amazing in my life, i think i like these better than the cupcakes!

Bare with me on measurements, i never measure anything i always cook to taste (its the Italian in me). So use your judgement with my measurements! Makes 9 small brownies (believe me, these are so rich a small one is enough!) I found the base to this recipe online, and tweaked what i thought needed adjusting.



-2 cup Ground Pecans

-1 cup ground oat groats (optional)

-3/4 cups dates, soaked 2 hours (use 1 cup for a fudgier texture)

-1/4 cup cocao powder


-2 tbspn Coconut oil (dont melt it)

-1 avocado

-2 tbspn liquid sweetener

-1/4 cup cocao powder (this measurement is a pure guess, sorry. i just kept dumping it in until i got the chocolate flavor i wanted! use your own judgement!)

Start with the base.  Crush the nuts as fine as you can get them in food processor or dry blade on Vitamix. Add the cacao powder until it is evenly mixed. Start dropping in the dates one at a time until a dough like mixture is formed. Put this mixture in a brownie tray and form.

Mix the icing ingredients in a food processor. It will work best in a small one. I used a large one and everything kept getting plastered to the sides so it took forever. A blender would also work. Once it is mixed spread on top of the brownies and refrigerate for about 30 mins, or however long you can wait to eat them!

The recipe for this icing tastes like chocolate pudding, so you could even just make the icing and eat it as is! I tend to leave out the coconut oil when I do this.. Its soooo yummy!


Simple Banana Breakfast March 30, 2010

This may sound too simple to be good, but it is great! i eat this almost every morning (when im not rushing out the door)


– 1 banana

– handful of your favorite nuts. (for this particular recipe i like walnuts)

-sun butter or almond butter (i like both)


-liquid sweetener. i use maple syrup or brown rice syrup (even though it isnt raw.)

Cut up the banana into slices and put in bowl. Add 2 tbspn of the almond butter.

break up your nuts into pieces and throw on top.

add a little bit of syrup. sprinkle cinnamon on top and mix together.

Yup, that easy and very tasty!  it is filling and will hold you over until lunch!

I LOVE mexican food. And these tacos are damn good. I probably eat them at least 4 times a week 🙂 Super Simple. Super Raw. Super Good!


2 cups walnuts

– 2 tablespoons water

– organic taco seasoning packet (or you can make your own with chili powder, coriander, cumin, and cayenne)

– Collard leaves

– Tomato

– green sauce (i will post this recipe too)

– raw sour cream (i will post a recipe for this too, i usually just use vegan sour cream.. no its not raw..)

-put walnuts and spices into Cuisinart. PULSATE! if you let it run you will just get some spicy walnut butter (i have done this!)

-add 2 tbspn of water.. and like magic the walnuts lump together like meat!

– cut out thick part of stem from collard leaf after washing.

-spread on the nut mix and throw on some lettuce, sauce, tomatoes, whatever you like on your taco! (i LOVE cilantro!)

– roll like a burrito!
