Mashed “Potatoes” and Gravy!! November 22, 2012

These taste very close to the real thing… only better because there is no starch!!!

  • 1 Head cauliflower
  • 3 tablespoon Lemon Juice
  • 1 Tablespoon Olive Oil
  • ⅔ Cup Soaked Cashews
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Miso Paste
  • ½ Tablespoon Psyllium Husk Powder
  • 2 Tablespoons Freshly Chopped Parsley
  • Salt


  • Blend in food processor with ¼ cup water. Strain in nut mylk bag. This will get rid of cauliflower taste.
  • Blend in food processor until desired consistency is reached. Add salt to taste.
  • Hand mix in chopped parsley.




For Gravy:



  • 1 Teaspoon Miso
  • ¼ Avocado
  • 2 Teaspoons Tamari
  • 1 Teaspoon Garlic Powder
  • 10 shiitake Mushrooms
  • ¼ Teaspoon Thyme
  • ¼ Teaspoon Sage
  • 1 Cup Water


Blend all in blender except for 4 mushrooms.

Chop remainder mushrooms and stir in.

Using hot water will make the gravy warm!

Put on top of Mashed “Potatoes” or any other dish calling for gravy!

Here is a great butter alternative that i whipped up this morning to go with my bread i made! Its creamy and salty and did the trick! It is high in really good fats too so it is great to have in the morning to get that brain pumping and ready for the day!


-3 tbs coconut oil

-1 tsp real sea salt

-1 tbs hemp seeds

Put all ingredients in a mortar and pestle and grind down the seeds and mix well. Put in refrigerator until hard, or if its cool in your home leave on the counter for a more creamy texture!

This is a super simple recipe for a quick and easy sandwich! You are guaranteed to feel full and satisfied after!



  • 1 Portobello
  • 1 Favorite Pepper (i used jalapeno)
  • Sprouts
  • 1 Avocado
  • 1 Tomato
  • Spinach or other favorite green
  • Olive oil, Apple Cider Vinegar, or favorite dressing
  • Salt, and other spices you would like to add. (I used oregano and basil)


Lay the portobello on the counter and place hand on top. With a serrated knife, cut the portobello  across so that you get two circular pieces. Flip the bottom part half over so that the darker inner part of the mushroom is facing up. Spread the avocado on it. Add salt and spices. Now start piling on your favorites! I add jalapenos, spinach, tomato, and sprouts. Spritz with Olive Oil and Apple Cider Vinegar.  Cut in half and enjoy!! You wont be disappointed!



Quick Oat-free Oatmeal February 9, 2012

So i recently developed a sensitivity to oats so I need to lay off them for a while. I loved eating my superfood oatmeal every morning with goji, mulberries, goldenberries, and cacao nibs with sprouted oats, honey or maple syrup and cinnamon. Sounds great right? So this morning I came up with a new one that is oat free and thought i would share it with you!


-1 cup flax seed (ground or sprouted) or Chia seeds (i used half and half)

-1 apple diced

-2 tbs liquid coconut oil (i love coconut oil if you prefer 1 thats fine too)

-1 tbs almond butter

-Honey/Maple Syrup to taste/Agave


Place flax/chia, half of the apple, coconut oil, sweetener, and cinnamon in the food processor until mixed. Add in the rest of the apple so that it remains chunky through out. Add any superfoods you would like! The food processor is not necessary but mixes it really nice. This will keep you so full for a long time. Its a great way to start your day energized!

These are sooo filling! they are the same color as regular burgers and even have a rough texture! these are great!


-1/2 cup ground flax (not super ground, a little chunky is nice )

-1/2 cup hulled sunflower seeds

-1/8 cup pine nuts

– some sprouts

– a few dash of italian spice (oregano, basil,thyme, rosemary)

– a very small yellow pepper (the one i used was the size of a jalapeño)

– a dash of Moroccan spice

-2 tbspn oil (Hemp would be yummy!)

throw it all in the food processor. it should be a little chunky! form into patties and put on a collard leaf or raw bread. I topped it with a little bit of veganaise, tomato, sprouts, and some sun dried tomato vinaigrette.  


Simple Banana Breakfast March 30, 2010

This may sound too simple to be good, but it is great! i eat this almost every morning (when im not rushing out the door)


– 1 banana

– handful of your favorite nuts. (for this particular recipe i like walnuts)

-sun butter or almond butter (i like both)


-liquid sweetener. i use maple syrup or brown rice syrup (even though it isnt raw.)

Cut up the banana into slices and put in bowl. Add 2 tbspn of the almond butter.

break up your nuts into pieces and throw on top.

add a little bit of syrup. sprinkle cinnamon on top and mix together.

Yup, that easy and very tasty!  it is filling and will hold you over until lunch!

Great for mac and cheese or veggie dip!


-1 cup cashews

-1/2 lg red bell pepper

-1/4 cup water

-2 tbspn lemon juice

-2 tbspn nutritional yeast

-1tbspn tahini

– Salt to taste

– Onion powder to taste (i use about 2 tbspn)

Blend in food processor or vitamix (to make it hot) until sauce is formed! put over the top of some zucchini noodles or kelp noodles for a healthy version of “easy mac!”… or just use for a great veggie dip!

– 2 cups walnuts (soak for a few hours)

– 1 cup grated carrots

– 1 chopped onion

-1 tbspn sweetener of your choice.

-1 tbspn oil

– 2 tbspn seasoning (i used Italian seasoning, but you can use poultry or whatever kind you like!)

– 2 tbspn nutritional yeast

-sea salt to taste

put all ingredients in food processor until a “meaty” texture is formed. Form into patties and put on your favorite raw bread with a tomato and lettuce on top! I sometimes use two romaine leaves as bread, and i bet the eggplant bread would rock!
